1 can sliced pineapple in its own juice
1 pkg unflavored gelatin
1/8 tsp cinammon
1 tsp lemon juice
1 tsp coconut extract
1 tsp vanilla extract
1/4 c cold water
1 pkg sweet-n-low
Drain pineapple, reserve juice. Dice pineapple, place in pie pan. Pour 1/4 c cold water in small mixing bowl, sprinkle gelatin over water, let stand. Heat pineapple juice in small saucepan, boil. Pour over gelatin, stir and add other ingredients and stir. Pour over diced pineapple. Chill in refrigerator for 1 hour. Just before serving, top with 8 tbsp Cool Whip.
